Hi to all you new breeder’s out there…
I know, you’re wondering, ‘is the pork really that good, to be worth all this trouble?’ Let me tell you one experience we had recently. We had a large smoke cured ham from one of our pigs at Easter. We all sat around the dinner table, friends and family, and enjoyed the fine meal my wife prepared. It was delicious, several people commenting that it was the best ham they had ever tasted. A couple days ago, we were in a rush for dinner, HEB (Texas’ grocery store) had their hams on sale, so we picked one up. We sat down at the dinner table, my 13 year old son took a bite, “YUCK!”, he said, “this isn’t a one of ours!”. He was right, it surely wasn’t one of ours, one of our Large Black Hogs.
You’ll pay more, but take it to a GOOD processor, because it’s important. And, I know it is a lot of trouble, and you have to wait so damn long before you butcher your first hog, but just wait, it’ll be the best pork you’ve ever eaten. It truly is delicious.
Anyway, we just wanted to let you know…

Oh, yes, it is! We just got ours back last week and yummy! It was the first time we used this processor and he told us when we picked it up, “I just knew ya’ll had messed up and let that pig get too big to be any good but I’m not proud – I was wrong!” We left him a pkg of chops and he was impressed. It was a barrow and he weighed 425 pounds so he was BIG. He was really not terribly fat though, long and fairly tall and really proportionate. We’ve got 2 more to go that aren’t as big, one looks more ‘fat’ than the other so we’ll see. Waiting on our labels to be approved so we can sell the pork in packages instead of on the hoof.
